Crab Tartlets and Mini Yorkies with Beef and Horseradish Cream

Crab filling
2 peeled medium eggs (boiled in simmering water for 6 minutes, then chilled in iced water to stop cooking process)
Teaspoon of Dijon Mustard
10ml white wine vinegar
Half a teaspoon of wasabi paste
80ml of rapeseed oil
Salt and white pepper for seasoning
6 tablespoons of crab meat

Method
Chop the eggs and place in a bowl with the mustard wasabi and vinegar and blend together, then very slowly add the oil to the mixture to make an emulsion (if it starts to split add a teaspoon of cold water to bring it back together).

Bind the crab meat with a tablespoon of the egg emulsion and place a spoonful in each of the pre-baked tartlet cases. Pipe a little emulsion using a piping bag or bottle on top and decorate with some lumpfish roe or Caviar and a feather of dill.

Beef and Horseradish Yorkie
3 tablespoons of
all-purpose flour
¾ of a cup of milk
2 eggs
Salt
2 tablespoons of oil
500gm of Beef Fillet
Tablespoon Horseradish
Tablespoon of cream cheese
Half a tablespoon of double cream
Handful of chopped chives

Method
Preheat your oven to 220ºc and place your mini muffin moulds with the oil divided into the bottom of each mould.

Place the rest of your ingredients in a bowl and using a wire whisk bring them together to form a batter. When the oil is smoking hot remove from the oven pour the batter to near the top of each mould and quickly return to the oven and cook for around 20 to 25 minutes until golden brown. Remove from the oven and allow to cool.

For the beef, place in an oven at 180ºc and roast for 20 to 25 minutes for medium rare remove and allow to cool.

With a wire whisk bring the horseradish cream cheese and cream together to make a soft cream that you can pipe.

Pop the middle of the Yorkie with your thumb by pressing down. Thinly slice your beef, cut in half and roll to make a rosette and place in the centre of the Yorkie. Pipe a little of the Horseradish cream in the centre and garnish with some chopped chive, making an elegant canapé or appetiser.
