The Pizzaioli Dream

If you love authentic Italian food, matched with good wine and served in a casual yet traditional setting, then Pizzaioli Italian Eaterie in Ayr is the place for you.

Opened at the end of November 2023, the restaurant is the second business for 30-year-old twin brothers Mattia and Jacopo, the first being their much-loved Pizzaioli takeaway pizzeria which they opened in November 2022 on the Sandgate in Ayr.

Having enjoyed immediate success with their takeaway business, serving authentic Italian pizzas, filled focaccias, supplis and sweet treats such as homemade cannolis and Nonna’s tiramisu, it was only a matter of time before expansion was on the horizon. When an opportunity to realise that ambition came up just a few metres away from their takeaway shop, the brothers acted quickly, securing the premises which would let them open a restaurant and develop the next stage in their food business journey.

If you ask Mattia and Jacopo what’s behind the secret of their success, the answers are as you would expect from a business built on authenticity – unassuming and sincere. They’ll tell you it’s because they serve the kind of simple, traditional food they grew up with back home in Rome which they sell at a reasonable price to customers who appreciate good, fresh fayre. But of course, while all of that is true, there’s more to their success than that.

For those who appreciate good food, what you immediately notice is the quality of the ingredients used and how Mattia and Jacopo, who both graduated in professional cookery back in Rome, can take a few of the best, freshest Italian ingredients available and transform them into something utterly delicious. It’s magic on a plate.

Importing some of the best equipment possible to deliver the kind of real Italian experience they want for their customers has been key to growing the business. One of the most notable pieces of kit imported from Italy, which arrived just days before the restaurant opened, is their pasta making machine. Weighing in at over 100kg and, with the help of the chefs, producing up to 8kg of pasta in 25 minutes, it’s an essential member of the kitchen team at Pizzaioli Italian Eaterie, producing the kind of pasta you might enjoy sitting outside in the sun in a small cobbled street in Rome. They can even produce a top-notch Negroni to complete the experience for you.

The restaurant menu reflects the commitment to fresh, quality ingredients. In addition to a carefully crafted selection of simple, traditional hand-made pasta dishes (think soft pillows of ravioli filled with sun-dried tomatoes, burrata cheese, pomodoro sauce and Parmagiano Reggiano) you can also enjoy authentic Sourdough Roman Pinsa with delightful flavour combinations (for example pomodoro base, fior di latte mozzarella, ventriciana salami, n’duja sausage and chilli-hot honey) fresh stuffed focaccias and of course some ridiculously delicious Italian desserts.

It’s not just the food that makes you want to return, though, it’s the people. Mattia, Jacopo and their team extend the kind of genuine Italian hospitality that makes you feel like you’re visiting an old friend. You are always welcome, always met with a smile and always served as if you’re the most important person in the room. That kind of hospitality is an Italian gift.

So what’s next for the brothers who have brought their passion for food all the way from Rome to Ayr? After almost two years in business, a period which has shown them just how much their customers appreciate genuine food and quality ingredients, they are confidently moving forward with their plans. With further growth on their minds, and the potential to expand into further destinations across Scotland, the Pizzaioli dream looks set to continue, which is welcome news for all the foodies out there who appreciate food with a heart.
